The Magic of Idaho Spuds
Potatoes are truly one of the most versatile vegetables, and Margaret B. has shown us the magic of Idaho Spuds (dehydrated hash browns) which are easy to store and can be used in a variety of preparations. In her presentation, Margaret shared how to make hash brown "waffles" and a delicious potato salad using this handy item. We think you'll love them!

Hash Browns
Ingredients:
Idaho Spuds
Waffle iron
Ketchup
Cooking spray
1 egg
1-2 tbsp olive oil
1 cup boiled water
Step 1
Open the hash brown carton, and pour 1 cup of boiling water into it. Close the carton and set a timer for 12 minutes.
Step 2
After 12 minutes are up, open the carton and drain any excess water from the hash browns. Crack the egg into a bowl and beat with a whisk. Add 1-2 tbsp olive oil, depending on how many hash browns you're using.
Step 3
Spray your waffle iron with cooking spray, and set the iron to the highest heat setting. Spoon hash browns onto the iron, then cook until no more steam is visible. For crispier hash browns, cook a little longer.
Step 4
Remove hash browns from the waffle iron and cut into slices if desired. Top with ketchup or any of your favorite toppings - you can also try cheese, sour cream, chives, or even BBQ sauce!
Potato Salad
Ingredients:
Idaho Spuds
Sweet relish
Mayonnaise
Greek yogurt
Mustard
Celery, diced
Onion, diced
Carrots, diced
1 hard boiled egg, sliced
Step 1
After preparing the hash browns with boiling water (see previous recipe), add desired proportions of ingredients in a bowl, to suit your taste. You can also add other ingredients if you already have a favorite potato salad recipe. Simply stir until combined and you're done!
